  4. In a large pan or skillet, heat 2 tbsp ghee over medium heat. Add chopped onions and sauté until they turn soft and golden brown (about 3-4 minutes).
  5. Add the minced garlic and ginger, and sauté for another 1-2 minutes until fragrant. If you're using green chilies, add them now.
  6. Prepare the Gravy:
  7. Add the tomato puree to the pan. Stir well and cook for 4-5 minutes, letting the tomato cook down and the flavors meld together. You can add salt, turmeric, red chili powder, and garam masala at this stage. Stir everything together and cook for a couple of minutes.
  8. Make it Creamy:
  9. Once the tomato mixture has cooked down, add the heavy cream (or coconut cream for a dairy-free option). Stir well, and then add 1/4 cup water to adjust the consistency to your liking. You can keep it thicker or add more water for a slightly lighter sauce.
  10. Add Paneer:
  11. Gently add the paneer cubes into the pan. Stir gently to coat the paneer with the creamy gravy. Let it simmer on low heat for 5-7 minutes, allowing the paneer to absorb the flavors.
  12. Finish with Kasuri Methi:
  13. Sprinkle kasuri methi (dried fenugreek leaves) into the curry and stir. This will add a unique and aromatic flavor to your butter paneer.
