  2. Lightly score the top of the paneer block (cross-hatch style) to allow flavors to absorb. Rub with salt, pepper, Italian herbs, and olive oil.
  3. Pan-sear or air-fry the paneer:
  4. Heat a non-stick pan or air fryer. Sear the paneer block on both sides until golden and slightly crisp (approx. 3–4 min each side).
  5. Assemble the pizza:
  6. Remove paneer from pan. Spread pizza sauce on top. Add onion, capsicum, olives, and cheese.
  7. Final melt:
  8. Air fry at 180°C for 5 mins or microwave for 30–60 seconds until cheese melts.
  9. Garnish & serve:
  10. Sprinkle chili flakes and oregano. Serve hot with a salad or keto dip.
