Heat ghee in a kadhai or pan. Add cumin seeds and let them crackle.

Add ginger-garlic paste and sauté for 1 minute.

Add tomato puree, coriander powder, red chili, salt, and cook till oil separates.

Toss in chopped onion (optional) and capsicum. Sauté until slightly soft but still crunchy.

Add chicken pieces and stir-fry on high heat for 2–3 mins.

Lower the flame, cover, and cook until chicken is fully cooked (10–12 mins).

Add garam masala and crushed kasuri methi.

Garnish with fresh coriander and serve hot.
