Prepare the Cabbage Leaves:

Boil water in a large pot and add a pinch of salt.

Trim the thick veins from the cabbage leaves (so they are more pliable for wrapping).

Blanch the cabbage leaves in the hot water for 2-3 minutes until soft and flexible. Remove them and set aside to cool on a clean kitchen towel or paper towel.

Prepare the Filling:

In a pan, heat 1/2 tbsp olive oil (or ghee) over medium heat. Add the ginger paste and garlic paste, sautéing for about 1 minute until fragrant.

Add the grated paneer to the pan and sauté for 2-3 minutes, allowing the moisture from the paneer to evaporate.

Add the cumin powder, turmeric powder, red chili powder, and garam masala, and sauté for another 2-3 minutes until the spices are well mixed.

Remove from heat and let the mixture cool slightly.

Once cooled, add the chopped cilantro and green onion, and mix well. Season with salt to taste.

Wrap the Momos:

Take a blanched cabbage leaf and place about 1-2 tablespoons of the paneer filling in the center.

Fold the edges of the cabbage leaf over the filling, folding in the sides and rolling it up, just like you would a traditional momo. Be careful not to overfill, as the cabbage leaf can tear if too much filling is used.

Repeat with the remaining cabbage leaves and filling.

Prepare a steamer by boiling water in the bottom. Lightly grease the steamer basket.

Place the cabbage-wrapped momos in the steamer basket, ensuring they are not touching each other. Steam for about 8-10 minutes or until the cabbage leaves are tender and the filling is cooked through.
