In a bowl, whisk together yogurt, water, ginger paste, green chilli, salt, turmeric, and red chilli powder until smooth and lump-free.

Heat Ghee:

In a small pan, heat ghee. Add cumin seeds, mustard seeds, and let them splutter.

Add Tempering Elements:

Add a pinch of asafoetida, curry leaves, and dry red chilli (if using). Sauté for 15–20 seconds.

Pour Over Yogurt Mix:

Immediately pour this tempering over the whisked yogurt mix. Mix once.

Heat Gently (Optional):

If you prefer it warm, you can heat the kadhi gently on low flame for 1–2 minutes, stirring constantly to prevent curdling. Do not boil.
