  2. Stir in the green curry paste and cook for 1 minute to bring out the flavor.
  3. Add coconut milk, water/broth, lime leaves, and salt. Bring to a gentle simmer.
  4. Toss in harder veggies first like cauliflower and broccoli, cook for 5–6 minutes until tender-crisp.
  5. Add zucchini, bell peppers, paneer/tofu, and let simmer for another 3–4 minutes.
  6. Lastly, stir in spinach, and let it wilt for 1–2 minutes.
  7. Finish with lime juice, garnish with fresh basil or coriander if desired.
  8. Serve hot as-is or with cauliflower rice or shirataki noodles.
