  1. Prepare the Cabbage Leaves:
  2. Bring a large pot of water to a boil and add a pinch of salt.
  3. Carefully remove 4 large cabbage leaves and trim the thick veins in the center (so they are more pliable for wrapping).
  4. Blanch the cabbage leaves by placing them in the hot water for 2-3 minutes. This will soften them and make them easier to wrap.
  5. Once done, drain and set the cabbage leaves on a clean kitchen towel or paper towels to remove any excess water.
  6. Prepare the Filling:
  7. Heat 1 tbsp olive oil (or ghee) in a pan over medium heat.
  8. Add the ground chicken and cook for about 5-6 minutes, breaking it apart with a spatula until fully cooked.
  9. Add the ginger powder, garlic powder, cumin powder, chili powder, and garam masala. Stir well to combine and cook for an additional 2-3 minutes until the spices are aromatic.
  10. Remove from heat and let the filling cool for a few minutes. Then, add the chopped cilantro and green onion, and season with salt to taste.
  11. Wrap the Momos:
  12. Take one blanched cabbage leaf and place about 1-2 tablespoons of the chicken filling in the center.
  13. Fold the sides of the cabbage leaf inwards and roll it up gently to form a small bundle, like a traditional momo. Be careful not to overfill, as the cabbage leaf might tear.
  14. Repeat the process with the remaining cabbage leaves and filling.
  15. Steam the Momos:
  16. Set up a steamer by boiling water in the base. Lightly grease the steamer basket or line it with parchment paper.
  17. Place the cabbage-wrapped chicken momos in the steamer basket, ensuring they aren’t touching each other.
  18. Steam for 10-12 minutes until the cabbage leaves are tender and the filling is fully cooked through.
  19. Serve:
  20. Remove the momos from the steamer and let them cool slightly before serving.
  21. Serve the keto cabbage wrapped chicken momos hot with a side of keto-friendly dipping sauce, like a spicy garlic sauce, or enjoy them as they are!
